jalapeno pepper, if desired
Start by roasting the peppers under a broiler or on the grill long enough to blacken the skin, skin and remove the seeds leaving the pepper as much in tact as you can
I made about 30!
mix in a little bit of chopped parsley for color
lay the peppers flat and place a small amount of the cheese mixture in each one
close the pepper up and continue until they are all done
Dip them in beaten egg and then roll in bread crumbs, fry in a large skillet until they are brown on both sides
roast the tomatillos under the broiler until soft and starting to blacken (about 10 minutes). I used about 20 tomatillos and 1 jalapeno which I removed the seeds from after roasting
put them in the food processor with a little cilantro (if you like cilantro) and the roasted jalapeno pepper (for a little more heat if you like a little more heat) and salt and pepper to taste, process until smooth
if you can’t find tomatillos, or don’t want to bother with this step, just use a jar or two of green salsa instead
place the peppers in a baking dish
cover with the tomatillo sauce or green salsa, and some grated jack cheese (if desired)…Can you really have too much cheese?
let them sit in the oven until your guests arrive or you are ready to leave for the party…
