This will get your motor running!
6 skinless boneless filets of salmon
1 t pepper from the mill
1/2 t dried thyme
1/4 t dried basil
1/4 t dried oregano
2 t Kosher salt
2 t smoked paprika
1/2 t red pepper
1 stick melted butter
melt the butter in a skillet
mix the seasonings in a bowl
Dredge the salmon in the melted butter
get a cast iron skillet as hot as you dare, let it sit on the heat until it’s blistering hot (up to five minutes)
sprinkle the salmon with the seasoning mixture and put it in the hot pan, carefully putting a little of the melted butter on top of the filet
cook about three minutes and then turn, adding a little more butter if you wish (I wish)..
Cook a few more minutes until the fish is blackened on the outside and flakes easily…
be careful with the hot pan!
cut some lemons to squeeze on top…
