You gotta love a salad that has bacon in it…seriously..

3 hard boiled eggs, peeled & sliced
1 head romaine
handful of parsley
2 green onions
4 cups cooked chicken
1/4 lb blue cheese
1/2 c red wine vinegar
1 t Worcestershire sauce
1/2 t Dijon mustard
1 clove garlic
1/3 cup extra virgin olive oil
Kosher salt and pepper from the mill
1 T or so of reserved blue cheese
Start by frying the bacon (that phrase makes me all happy inside). When it’s crispy, drain it on paper towels until it cools down.

mince the garlic, add the vinegar, mustard, salt and pepper to taste and Worcestshire sauce. Take a little bit of the blue cheese and mash in with the vinegar mixture. Slowly add the olive oil while whisking continuously to make a yummy dressing..
yowsa! this is good….
I chilled a bottle of Sauvignon Blanc (Meridian has a nice light one) to serve with it.
Crusty French bread makes it a meal…
