I don’t remember my Mom making this very often, but I found this recipe (all torn up and falling apart), written on a sheet from a steno pad, folded up in my Mom’s recipe box, so decided to give it a try. It’s a simple, straight forward lasagne with LOTS of cheese (I even added a little extra, for good measure). At any rate, try it sometime when you are in the mood for the ultimate cheesy comfort food!
1/2 cup chopped onion
1 clove garlic, minced
2 T salad oil
1 lb ground beef
1 can tomato sauce (small can)
1 can tomato paste (small can)
1 c water
1 t salt
1/2 t dried oregano
1/4 t black pepper
8 oz lasagne noodles, cooked and drained
2 cups cottage cheese or ricotta
1/2 cup shredded parmesan
8 oz sliced mozzarella
chop the onion
Saute with the garlic in the oil, adding the meat after a few minutes. Saute until the meat browns.
add tomato sauce, tomato paste, water and seasonings
cover and simmer for 20 minutes, stirring occasionally
cook the lasagne noodles, spread a little sauce in the bottom of a baking dish, then layer with the noodles and cheese, make as many layers as you have ingredients.
I sliced the mozzarella a little thicker than Mom used to and it made a nice cheesy layer. I also added a few ounces more mozzarella than the recipe calls for because I’m kind of a rebel.
finish off with tomato sauce and a good sprinkling of Parmesan (I used a little more than Mom suggested)
Bake at 350 degrees in a preheated oven for 45 minutes or until the cheese melts and it is heated through
Mom used to serve her lasagne with a choice of water, milk or juice, but I have mine with Chianti!
