We were having a little discussion at the office the other day about canned soup. The topic of conversation was “Do you have a recipe where you use canned soup?” One coworker, who has six children, said she buys it by the case. Pretty much everyone else, though, was of the opinion that recipes using canned soup are “out of style” (sorry, Campbells). I still use canned soup in some of my recipes, but I have to admit that there aren’t many. However, there is one dish you simply cannot make without canned soup and that is Tuna Casserole. This is my go-to comfort food recipe that I make when I find myself missing all of the people in my life who have passed on. It’s the way my grandmother made it. Try it sometime when you are feeling blue, it really helps!
2 cups elbow macaroni
1 t vegetable oil
1 can Campbell’s cream of mushroom soup
1/2 cup milk
1/2 cup sour cream
1 can tuna, drained and flaked
1 cup frozen peas
1 cup shredded Cheddar Cheese
salt and pepper to taste
when the water boils, add the macaroni and cook until it’s slightly underdone (you are going to cook it further later, so you don’t want it too soft)
mix in the cheese, salt and pepper to taste
Awww….comfort food at it’s finest, people!
