I had a bottle of fairly inexpensive Tuscan wine that really needed drinking, so I decided to make some pasta so I’d have an excuse to open it. Here’s what I did:
I took a few links of sweet Italian sausage
out of their casings, chopped them roughly and plopped them down in my big iron skillet:
While the sausage was browning, I chopped up a large onion:
soaked some assorted dried mushrooms in hot water for a few minutes and drained them
I took the browned sausage out of the skillet, leaving some of the drippings behind
The onions & mushrooms then go into the skillet and hang out there until they are soft and slightly carmelized
Then chop up a little garlic (ok, a lot of garlic)
It’s usually about this time that I just have to have a little wine, so the pictures may start getting a little fuzzier (sorry)
Chop some fresh herbs, I used basil and oregano:
add them to the vegetables
Then put the whole mess in a Dutch oven and add some chopped fresh tomatoes,
along with a large can of crushed tomatoes & about a 1/2 a cup of Romano cheese
Tweak the seasonings to suit your taste (Kosher salt and some fresh ground pepper) and add a little red wine. Let the whole thing simmer while you make some pasta.
Garnish with a little more basil and some more Romano cheese. Holy moley was this ever lovin good!
