I absolutely love eggs, fried, poached, boiled, creamed, saladed….
Today is World Egg Day! So in honor of one of my very favorite foods to eat, here is my very favorite way to make eggs…
Try it some morning when you need a little spice in your life!
1/2 small yellow onion
1 small potato, diced
1/4 cup dry chorizo, diced
1/4 cup bacon, diced
1/4 cup breakfast sausage, diced
1 roasted anaheim pepper, diced
1/2 cup diced Monterey Jack cheese
oil and butter for sauteeing vegetables
in another pan, saute the chorizo, bacon and breakfast sausage for about 15 minutes
in yet another pan, fry the potato until crispy
turn it on itself like an omelet and let it finish cooking until the eggs are cooked through – Serve on a flour tortilla with homemade habanero sauce on the side (recipe in “She Cooks” archives)
