Apple Caramel Muffins

This makes one dozen of the best muffins evah!!!

Ingredients

  • 2 cups flour
  • 1 t baking powder
  • 1/4 t salt
  • 1 t cinnamon
  • 4 T butter
  • 1/2 cup sugar
  • 1 large egg
  • 1 t almond extract
  • 1 cup milk
  • 1 large apple, skin and core removed, chopped
  • 1/2 cup chopped caramels
  • topping:
  • 1/3 cup flour
  • 4 T sugar
  • 2 T butter
  • 1/4 cup sliced almonds

Instructions

  1. Mix together the flour, baking powder, salt and cinnamon in a large bowl, set aside
  2. With an electric mixer, cream the butter, sugar, egg, almond extract and milk together
  3. Slowly add the dry ingredients to the wet, mixing as you go
  4. Stir in the the apples and caramels by hand
  5. Portion out the batter into either a greased or paper lined muffin tins
  6. Mix together ingredients for topping and sprinkle over the muffin batter
  7. Bake at 350 degrees for 20 to 25 minutes until the muffins are starting to brown and spring back to the touch
