Huevos for One
 
Ingredients
  • 1 medium size fresh tomato
  • ½ small jalapeno minced
  • 1 sprig cilantro, chopped
  • 1 sprinkle of rice vinegar
  • 1 raw tortilla
  • drizzle of oil
  • ⅓ cup black beans, heated in microwave briefly
  • 2 eggs, fried over easy in butter
  • ⅓ cup pepper jack cheese, shredded finely
  • salt and pepper from the mill to taste
Instructions
  1. chop tomatoes and mix with jalapeno and cilantro in a small bowl, sprinkle with salt and vinegar, set aside
  2. heat a large skillet with a little oil, fry tortilla on both sides until it starts to crisp slightly
  3. fry two eggs in butter, over easy
  4. place tortilla on a plate
  5. add warmed beans
  6. eggs
  7. salsa fresca
  8. cheese
  9. sprinkle with salt and pepper
