Maple Glazed Bacon Dutch Baby

Ingredients
  • 3 large eggs at room temperature
  • ⅔ cup milk at room temperature
  • ⅓ cup sugar
  • ⅔ cup all purpose flour
  • ½ t vanilla
  • ¼ t cinnamon
  • ⅛ t nutmeg
  • ½ stick butter
  • 4 slices of bacon
  • ¼ c real maple syrup
Instructions
  1. Preheat oven to 450 degrees
  2. Blend eggs in blender until frothy
  3. Add milk and blend for a few pulses
  4. Add sugar, flour, vanilla, cinnamon and nutmeg and blend thoroughly
  5. Place 10" cast iron skillet in oven and add butter
  6. Watch until butter melts, then immediately add the pancake batter
  7. Bake 18 to 25 minutes or until puffed up and browned
  8. meanwhile:
  9. Brown bacon in large skillet over medium high heat until crispy
  10. Break into small pieces
  11. Add back to pan with maple syrup
  12. Warm and stir until bacon is covered in syrup
  13. Spread bacon mixture on top of Dutch Baby and serve!
