Leek Fried Rice
  • 1 large leek, chopped - white part only
  • 2 cloves garlic, minced
  • 2 cups cold rice
  • 2 t soy sauce
  • 1 green onion, minced
  • ½ cup chopped ham
  • ¼ cup frozen peas
  • ⅓ cup carrots, already steamed
  • 3 t sesame oil
  1. Steam carrots until soft
  2. Heat sesame oil in a large skillet or wok over medium heat
  3. Add leek and onion and saute for a few minutes
  4. Add ham and garlic, heat through
  5. Add rice and cook, stirring continuously until rice is crispy in spots and heated through
  6. Sprinkle with soy sauce and a little bit more of the sesame oil if desired
