Lima Bean Salad

Ingredients
  • 1 T extra virgin olive oil
  • ¼ cup chopped hellow onion
  • 1 t minced garlic
  • 2 t thyme
  • 1 large package frozen lima beans
  • 2 T chopped red onion
  • 2 T fresh lemon juice
  • 5 T olive oil
  • 1 t basil
  • 2 T minced parsley
  • Kosher Salt and pepper from the mill to taste
Instructions
  1. Heat a saucepan over high heat for one minute
  2. Pour in the olive oil and add the yellow onions and garlic
  3. Turn the heat down to medium and saute for a few minutes until the onion softens
  4. Add the beans
  5. Let it cook for a minute stirring to get the beans covered in oil and onion
  6. Add enough water to cover the beans by an inch and a little salt and pepper
  7. Simmer for about 5 minutes, then turn off the heat and let it sit while you:
  8. Put the onion in a small bowl, add the lemon juice and a pinch of salt
  9. Let it sit five minutes and then add the rest of the olive oil
  10. Whisk it all together
  11. Drain the beans and put them in a serving bowl
  12. Add the dressing, thyme, basil and parsley
  13. Toss lightly
