Ina's Split Pea Soup

Ingredients
  • 1 C chopped yellow onion
  • 2 cloves garlic, minced
  • ⅛ C olive oil
  • ½ t dried oregano
  • 1½ t Kosher Salt
  • 1 t freshly ground pepper
  • 2 C medium diced carrots
  • 1 C medium diced red boiling potatoes, unpeeled
  • 1 lb dried peas
  • 8 C water or chicken broth
Instructions
  1. In a large stock pot, saute onions and garlic in the olive oil until onions are translucent
  2. Add oregano, salt and pepper
  3. Add carrots, potatoes, ½ of the split peas and water or broth
  4. Simmer uncovered for 40 minutes, skimming the foam off occasionally
  5. Add the remaining peas and simmer another 40 minutes until the peas are soft
  6. Taste for seasoning
