Fresh Tomato Tart

Ingredients

  • 7 sheets of filo dough, thawed
  • 2 T olive oil
  • 5 T butter, melted
  • 7 T Parmesan cheese
  • 1 C thinly sliced red onion
  • 1 C shredded mozzarella
  • 8 Roma tomatoes, sliced
  • 1 T dried thyme
  • salt & pepper to taste

Instructions

  1. Line a large cookie sheet with parchment paper and brush lightly with oil
  2. Lay a sheet of filo dough on the paper and brush with a little butter and sprinkle w 1 T Parmesan
  3. Repeat with the rest of the filo, butter and Parmesan
  4. Top with mozzarella, onions, sliced tomatoes and thyme
  5. Bake in a preheated 375 degree oven for 30 or 35 minutes
  6. Let cool before slicing
