Fresh Tomato Tart

- 7 sheets of filo dough, thawed
- 2 T olive oil
- 5 T butter, melted
- 7 T Parmesan cheese
- 1 C thinly sliced red onion
- 1 C shredded mozzarella
- 8 Roma tomatoes, sliced
- 1 T dried thyme
- salt & pepper to taste
- Line a large cookie sheet with parchment paper and brush lightly with oil
- Lay a sheet of filo dough on the paper and brush with a little butter and sprinkle w 1 T Parmesan
- Repeat with the rest of the filo, butter and Parmesan
- Top with mozzarella, onions, sliced tomatoes and thyme
- Bake in a preheated 375 degree oven for 30 or 35 minutes
- Let cool before slicing
