Grate a Tablespoon or three or four of gruyere cheese

and let cook for a minute, then turn the omelette on itself, grate a little more cheese on the top and let it cook until completely set
I had mine with a tomato sliced, dredged in bread crumbs and fried in olive oil and it was wonderful!
