Pickled Garlic

Ingredients

  • 2 C peeled garlic cloves
  • 1 1/2 quarts of water
  • 1 1/4 C of white wine vinegar
  • 1 T Kosher Salt
  • 2 t sugar (optional)

Instructions

  1. Bring water to a boil in a large saucepan
  2. Add garlic and boil a few minutes
  3. Drain and pack into sterilized pint jars
  4. Bring the white wine vinegar to a boil, add salt and boil for a minute
  5. Pour over garlic in jars
  6. Remove air bubbles, leaving a 1/2 ” headspace
  7. Wipe rims and put on lids
