Chewy, soft oatmeal chocolate chip cookies
1 C packed light brown sugar
1/2 C white sugar
1 C butter at room temperature
1 t vanilla extract
2 eggs
1 1/4 C flour
1/2 t baking soda
1 t salt
3 C quick oats
1 C semi sweet chocolate chips
In a stand mixer or large bowl cream butter, brown sugar and white sugar until smooth
Add eggs one at a time, beating after each addition
Add vanilla, mix thoroughly
Combine flour, baking soda and salt together
Add flour mixture a little at a time to the butter and sugar mixture mixing until blended
Add oats and mix on low speed until just combined
Fold in chocolate chips
Drop by the teaspoon onto ungreased baking sheets
Bake at 325 degrees for about 12 minutes
