I’ve always been kind of a sucker for French men…
I concocted a warm salad to make him feel at home, and I do have to say it is quite tasty! It’s spicy and hot and well, you get the picture….
4 cups sliced red caggage
2 roasted Anaheim peppers
1/2 cup sliced red onion
1 green apple
3 t white wine vinegar
3 t sugar
3 T butter
turn the heat down very low so it slowly melts while you chop the vegetables:
Note: I roasted, peeled and froze these last summer when I had millions of them from the garden. If you weren’t quite as smart (tee hee!), you should probably roast and peel them before you start melting butter and chopping vegetables..Sorry, when I think about butter melting, I get kind of excited and forget about everything else!
When the vegetables have softened and warmed up, about 15 minutes, pour the dressing on and toss gently…
I served this with a pork roast and a light lovely Gewurztraminer
