Chocolate Chunk Cookies

Cookies with Chunks of Chocolate and a sprinkle of salt

Ingredients

2 1/2 cups of roughly chopped  good  chocolate, mixed dark & milk 

2 3/4 cups all purpose flour

2 sticks/ 8 ounces butter, soft but cool

1 cup of packed light brown sugar

1 cup white sugar

2 t kosher salt, plus more for sprinkling

1 teaspoon of baking soda

1/2 teaspoon of baking powder

1 tablespoon of vanilla extract

1/8 t of grated nutmeg

1 large egg, straight from the fridge

Instructions

Preheat oven to 350 degrees

Placed chopped chocolate in a bowl, and then sift on flour and toss gently

Combine butter, brown sugar, white sugar, salt, baking soda, baking powder, vanilla and nutmeg in bowl of stand mixer fitted with a paddle

Mix on low speed until combined, then on medium for about 5 minutes

Add egg with the mixer running, and beat until smooth

Reduce speed to low and add chocolate and flour mixture a little at a time until completely mixed

Drop by tablespoons on parchment lined cookie sheets, 2 inches a part

Sprinkle with a little kosher salt

Bake until puffed up a bit about 12 to 15 minutes
