Fried Goat Cheese & Berry Salad

Creamy goat cheese with fresh berries

Ingredients

Scale
  • large bag mixed greens
  • 2 cups assorted berries, slice any that are larger
  • handful of coconut flavored almonds
  • 5 thick slices of goat cheese
  • 1/2 c bread crumbs
  • 2 T olive oil
  • dressing:
  • 1/4 c champagne vinegar
  • 2 T honey
  • 2 T fresh lemon juice
  • 1/2 t salt
  • 1/2 t black pepper from the mill
  • 1/2 c olive oil

Instructions

  1. Wash and dry the greens, place in a bowl
  2. Wash and drain the berries and add with almonds

  4. Dredge goat cheese in bread crumbs, fry briefly in olive oil, just until the cheese starts to melt
  5. Place hot cheese on the salad
  6. Whisk the vinegar, honey, lemon juice, salt and pepper in a large bowl
  7. Add the olive oil slowly, constantly whisking until it’s emulsified
  8. Pour over the salad and toss gently
