Fried Goat Cheese & Berry Salad

Creamy goat cheese with fresh berries

- large bag mixed greens
- 2 cups assorted berries, slice any that are larger
- handful of coconut flavored almonds
- 5 thick slices of goat cheese
- 1/2 c bread crumbs
- 2 T olive oil
- dressing:
- 1/4 c champagne vinegar
- 2 T honey
- 2 T fresh lemon juice
- 1/2 t salt
- 1/2 t black pepper from the mill
- 1/2 c olive oil
- Wash and dry the greens, place in a bowl
- Wash and drain the berries and add with almonds

- Dredge goat cheese in bread crumbs, fry briefly in olive oil, just until the cheese starts to melt
- Place hot cheese on the salad
- Whisk the vinegar, honey, lemon juice, salt and pepper in a large bowl
- Add the olive oil slowly, constantly whisking until it’s emulsified
- Pour over the salad and toss gently
