Fried Goat Cheese & Berry Salad

A great way to take advantage of the gorgeous berries in the markets right now.

I used blueberries and sliced strawberries in this one, but any mix of berries works.  Serve it while the goat cheese is still a little warm.   This is my very favorite salad!  This recipe makes a LOT of salad, so if you aren’t feeding a crowd, cut it in half.

Creamy goat cheese with fresh berries

Ingredients

Scale
  • large bag mixed greens
  • 2 cups assorted berries, slice any that are larger
  • handful of coconut flavored almonds
  • 5 thick slices of goat cheese
  • 1/2 c bread crumbs
  • 2 T olive oil
  • dressing:
  • 1/4 c champagne vinegar
  • 2 T honey
  • 2 T fresh lemon juice
  • 1/2 t salt
  • 1/2 t black pepper from the mill
  • 1/2 c olive oil

Instructions

  1. Wash and dry the greens, place in a bowl
  2. Wash and drain the berries and add with almonds

  4. Dredge goat cheese in bread crumbs, fry briefly in olive oil, just until the cheese starts to melt
  5. Place hot cheese on the salad
  6. Whisk the vinegar, honey, lemon juice, salt and pepper in a large bowl
  7. Add the olive oil slowly, constantly whisking until it’s emulsified
  8. Pour over the salad and toss gently

    We don’t usually put blueberries in savouries here but I tried my first savoury blueberry dish (a beef and blueberry soup) and it was delicious! So I must give this a go 😀

    Oh boy. Oh boy!

    I think I have all these ingredients in my fridge right now.

    Just came back from Idaho-Northern California and the berries at the farm stands were incredible!

    I guess I’ll have to settle for organic ones from Trader Joes, though.

    We have such similar tastes! You always make me drool.

    In a good way!
