Wild Boar Hash



2 T olive oil 

3 or 4 medium potatoes, diced

1 large onion, diced

1 C shredded boar or pork, chopped 

1/2 C beef broth 

salt and pepper to taste 

eggs for serving 


Heat olive oil in large skillet until it shimmers

Add potatoes and cook over medium high heat for about 10 minutes until they start to crisp up 

Add onions and cook until they start to carmelize 

Add meat and cook over medium heat

Add beef broth and cover, cook over low heat until cooked through, about 10 minutes 

Serve with fried eggs and Tabasco, salt and pepper to taste
