Artichoke Pasta

Creamy pasta with artichokes and venison sausage 



1/4 C butter

1/4 C olive oil

1 medium onion, chopped

1 C chopped artichoke hearts

1 C white wine

2 C smoked venison sausage or any type of summer sausage 

1 C heavy cream

1 t Kosher salt

1/4 t black pepper

1/2 C shredded Parmesan cheese 

1 lb of pasta, cooked according to the directions on the package


Melt the butter in a large skillet

Add the olive oil 

Add onion and saute until soft, a few minutes

Add artichoke hearts, white wine and sausage

Let simmer for about 10 minutes 

Add cream, salt, pepper and Parmesan Cheese

Serve over cooked pasta with extra cheese
