Artichoke Pasta

Artichoke Pasta with Venison Sausage

The weather has turned a little cooler up here, so I decided some comfort food was in order. Here’s what I made to warm my old bones….

Artichoke Pasta

Print Recipe

Creamy pasta with artichokes and venison sausage 

  • Author: Rocky Mountain Woman

Ingredients

Scale

1/4 C butter

1/4 C olive oil

1 medium onion, chopped

1 C chopped artichoke hearts

1 C white wine

2 C smoked venison sausage or any type of summer sausage 

1 C heavy cream

1 t Kosher salt

1/4 t black pepper

1/2 C shredded Parmesan cheese 

1 lb of pasta, cooked according to the directions on the package

Instructions

Melt the butter in a large skillet

Add the olive oil 

Add onion and saute until soft, a few minutes

Add artichoke hearts, white wine and sausage

Let simmer for about 10 minutes 

Add cream, salt, pepper and Parmesan Cheese

Serve over cooked pasta with extra cheese

    I could just about smell that butter, onion and cheese – and at this hour of the morning have now got a dinner idea in my head that will niggle me all day. Great ‘A’ post – looks delicious!

    Wow! That was some kind of A #1 post! I can hardly wait for ‘D’time to try the Artichoke Pasta recipe. Not only does it look good through your photos, but I swear it smells divine….do computers have the sense of smell…I’m sure mine does!

    What a great recipe for for LOW CALORIE DINING..ahahahahah! I could smell it cooking as I was reading. This has to be one “yummy, yummy, yummy in my tummy, tummy, tummy, recipe for one who cooks with vino and LOVES artichokes.

    Thanks for stopping by my blog and commenting on my A for Allergy post. I LOVE having visitors, and I especially love ones from the Rocky Mountains. We were in Estes Park for 4 days 8 years ago – my son was getting married over in Cuchara – and it was heavenly. Sorry about the fires and the smoke….miserable.No wonder your eyes are hurting and your nose is running. Hope the winds turn in the other direction soon.

    Oh, that looks delicious! I’ve only eaten artichoke twice in my life but that recipe makes them look incredible 🙂 I can just smell the pasta just from looking at the pictures! I really want to try making this one day!

    I try to eat healthy, I really do, but recipes like this one tempt me so much! I adore artichokes…never thought to pour them over pasta. And oh my that sauce!

    Wow! That looks totally scrumptious. I just came in from the garden where I was watering the artichokes but, alas, there is nothing I can cut on them.
