Black Olive Pesto Bruschetta

- 2 cloves of garlic
- 2 T olive oil
- 1 small shallot
- 1 1/2 C ricotta cheese
- 1/2 C black olives
- Juice from 1/2 lemon
- Sprig of basil, chopped
- 1 can of small black olives, drained
- Sliced baguette or crackers
- Place all ingredients in a food processor and process until smooth
- Spread on bread or crackers
- Top with a whole black olive
