Black Olive Pesto Bruschetta

Ingredients

Scale
  • 2 cloves of garlic
  • 2 T olive oil
  • 1 small shallot
  • 1 1/2 C ricotta cheese
  • 1/2 C black olives
  • Juice from 1/2 lemon
  • Sprig of basil, chopped
  • 1 can of small black olives, drained
  • Sliced baguette or crackers

Instructions

  1. Place all ingredients in a food processor and process until smooth
  2. Spread on bread or crackers
  3. Top with a whole black olive
