Ina’s Broccoli with Garlic

- 8 cloves of garlic, peeled and chopped
- 1/2 C good olive oil
- 1/2 t red pepper flakes
- 1/2 t kosher salt
- 2 large stalks of broccoli, cut into florets
- In a small, heavy-bottomed saucepan, bring the garlic and oil to a boil
- Simmer, uncovered for 10 to 15 minutes until garlic is brown and tender
- Turn off the heat, add pepper flakes and salt
- Let cool to room temperature, drain garlic, reserve the oil
- Blanch the broccoli in a large saucepan with lots of salted water for 2 or 3 minutes
- Drain and plunge into ice water to stop the cooking, then drain well
- In a large bowl, mix the broccoli, garlic and enough of the oil to make the garlic glisten
