Ina’s Broccoli with Garlic

Simple, healthy – the perfect salad – great with roast chicken – and, as always, Ina adds just the right touch of seasoning to make an ordinary dish extraordinary.

Ingredients

Scale
  • 8 cloves of garlic, peeled and chopped
  • 1/2 C good olive oil
  • 1/2 t red pepper flakes
  • 1/2 t kosher salt
  • 2 large stalks of broccoli, cut into florets

Instructions

  1. In a small, heavy-bottomed saucepan, bring the garlic and oil to a boil
  2. Simmer, uncovered for 10 to 15 minutes until garlic is brown and tender
  3. Turn off the heat, add pepper flakes and salt
  4. Let cool to room temperature, drain garlic, reserve the oil
  5. Blanch the broccoli in a large saucepan with lots of salted water for 2 or 3 minutes
  6. Drain and plunge into ice water to stop the cooking, then drain well
  7. In a large bowl, mix the broccoli, garlic and enough of the oil to make the garlic glisten

    I’ve had spinach, chard, zucchini, and mushrooms cooked with garlic and red pepper flakes—time for broccoli. It looks good!

    Beautiful dish! So pretty and I know, I know, I am weird! But I L O V E broccoli so I will be trying this.     Gorgeous, gorgeous green…so springy. I have a recipe where I sauté broccoli florets with garlic and ginger–sounds similar. But I think the infused oil would be perfect here. Sounds like a whole dinner. Maybe some brown rice. Happy Cinco de Mayo! (beautiful pics)
