Ina’s Broccoli with Garlic

  • 8 cloves of garlic, peeled and chopped
  • 1/2 C good olive oil
  • 1/2 t red pepper flakes
  • 1/2 t kosher salt
  • 2 large stalks of broccoli, cut into florets


  1. In a small, heavy-bottomed saucepan, bring the garlic and oil to a boil
  2. Simmer, uncovered for 10 to 15 minutes until garlic is brown and tender
  3. Turn off the heat, add pepper flakes and salt
  4. Let cool to room temperature, drain garlic, reserve the oil
  5. Blanch the broccoli in a large saucepan with lots of salted water for 2 or 3 minutes
  6. Drain and plunge into ice water to stop the cooking, then drain well
  7. In a large bowl, mix the broccoli, garlic and enough of the oil to make the garlic glisten
