Kicked Up Lobster Salad

- 2 small precooked lobsters
- 3/4 T toasted sesame seeds
- 1/4 C grapeseed oil
- juice from one lemon
- 1 t sugar
- 1 whole red chili pepper, diced
- kosher salt and pepper from the mill
- 1 small head of lettuce
- 1 C crispy Chinese noodles
- 1/4 C fresh cilantro, chopped
- Toast the sesame seeds in a small skillet over low heat for a few minutes
- Whisk together grapeseed oil, lemon juice, salt & pepper
- Remove the meat from the lobster shells – I find a scissors handy for this task
- Wash and spin dry the lettuce, tearing it into small pieces
- Mix the lettuce and lobster together and dress with the lemon dressing
- Add salt and pepper to taste
- Garnish with the cilantro, noodles and sesame seeds
