Kicked Up Lobster Salad

My little local market started selling precooked lobsters and I just couldn’t resist buying some. I love lobster, but it’s expensive and definitely a once in a while treat. It’s been so hot here, though, that I just don’t want to cook, so I used that excuse to buy two lovely lobsters. I used the meat to make a spicy, “kicked” up summer salad…

Kicked Up Lobster Salad

Ingredients

Scale
  • 2 small precooked lobsters
  • 3/4 T toasted sesame seeds
  • 1/4 C grapeseed oil
  • juice from one lemon
  • 1 t sugar
  • 1 whole red chili pepper, diced
  • kosher salt and pepper from the mill
  • 1 small head of lettuce
  • 1 C crispy Chinese noodles
  • 1/4 C fresh cilantro, chopped

Instructions

  1. Toast the sesame seeds in a small skillet over low heat for a few minutes
  2. Whisk together grapeseed oil, lemon juice, salt & pepper
  3. Remove the meat from the lobster shells – I find a scissors handy for this task
  4. Wash and spin dry the lettuce, tearing it into small pieces
  5. Mix the lettuce and lobster together and dress with the lemon dressing
  6. Add salt and pepper to taste
  7. Garnish with the cilantro, noodles and sesame seeds

    Great recipe and post for K ~ Wow! Lobster ~ Here it is best boiled then enjoyed with melted butter or not or lobster rolls with celery and just a tad of mayo ~ Delish!

    Doubt I can find any lobster here though I will try. That salad looked so good, it would even be great sans lobster. I need to break out the sesame seeds.
