Kicked Up Lobster Salad

Ingredients

  • 2 small precooked lobsters
  • 3/4 T toasted sesame seeds
  • 1/4 C grapeseed oil
  • juice from one lemon
  • 1 t sugar
  • 1 whole red chili pepper, diced
  • kosher salt and pepper from the mill
  • 1 small head of lettuce
  • 1 C crispy Chinese noodles
  • 1/4 C fresh cilantro, chopped

Instructions

  1. Toast the sesame seeds in a small skillet over low heat for a few minutes
  2. Whisk together grapeseed oil, lemon juice, salt & pepper
  3. Remove the meat from the lobster shells – I find a scissors handy for this task
  4. Wash and spin dry the lettuce, tearing it into small pieces
  5. Mix the lettuce and lobster together and dress with the lemon dressing
  6. Add salt and pepper to taste
  7. Garnish with the cilantro, noodles and sesame seeds
