Roasted Zucchini

  • 3 medium zucchini
  • 3 T olive oil
  • salt and pepper to taste


  1. Preheat oven to 400 degrees
  2. Slice the zucchini in half lengthwise, then score along the inside flesh to make a crosshatch
  3. Brush with olive oil
  4. Salt and pepper lightly
  5. Place face down in a medium hot skillet until the zucchini browns a bit
  6. Put immediately into a 400 degree oven and let roast until the flesh gets soft, about 20 minutes
