BROCCOLINI SALAD

Broccolini Salad with egg, tomato and red pepper is a great lunch or light dinner this time of year! Cooked for just a few minutes, broccolini is the main star here with cherry tomatoes, lettuce, egg, a crisp red pepper and a light lemon vinaigrette.

Bright, tart salad with broccolini and lemon vinaigrette

Ingredients

Scale

1 bunch of broccolini

2 C of chopped lettuce, your choice

1 red pepper, chopped

2 hard boiled eggs, shells removed and cut in half

1 C of cherry tomatoes 

vinaigrette:

juice from one lemon

1/3 C olive oil

salt & pepper to taste

Instructions

Bring salted water to a boil then add broccolini for about 2 or 3 minutes

Rinse immediately with cold water

Mix lettuce, eggs, broccolini and cherry tomatoes together in a large salad bowl

Whisk together olive oil, lemon juice, salt & pepper

Pour over vegetables and toss lightly
