Salmon with Cherries

The very first cherries are starting to appear in the markets so I decided to combine two of my very favorite Oregon ingredients into this ever so good salmon with cherries.  Fresh cherries are a gift from God.  This was so good, I saved some of it and it was almost as good for lunch the next day.

Ingredients

Scale
  • 1 cup whole cherries, pits removed
  • 1 T balsamic vinegar
  • 1 T lemon juice
  • 1 t honey
  • dash of salt
  • 2 salmon filets
  • salt and pepper
  • 1 or 2 T sesame oil

Instructions

  1. Mix the cherries, vinegar, lemon juice, honey and salt in a small saucepan over low heat for 5 or 10 minutes
  2. Sprinkle the salmon with salt and pepper and fry in sesame oil over medium heat until cooked through, about six minutes each side

I had this with a glass of rose’ and a quinoa salad and it was all I could do not to scarf both filets down without taking a deep breath.  The sweetness of the cherries with the balsamic is kind of magical in my humble opinion.
