DUTCH BABY

My grandmother made Dutch Babies for me and I make them for my grandkids.  It’s the circle of life, right in my kitchen!

This is the traditional Dutch Baby that my grandmother made. My mother made her own version, but I’ll save that for another post…

Ingredients

Scale
  • 1/3 cup powdered sugar
  • 1/2 cup flour
  • 3 large eggs at room temperature
  • 1/2 cup whole milk at room temperature
  • 1/4 t vanilla extract
  • 1/8 t cinnamon
  • 1/8 t salt
  • 1/8 t nutmeg
  • 1/2 stick unsalted butter

Instructions

  1. Place skillet in oven and preheat to 450 degrees
  2. Blend flour, eggs, milk, vanilla, cinnamon, salt and nutmeg in a blender until smooth
  3. Put butter in heated skillet
  4. As soon as it melts, pour batter into skillet
  5. Bake for about 12 to 15 minutes or until puffy and starting to brown
  6. Sprinkle with powdered sugar

Remove from the oven and sprinkle with the confectioners’ sugar (I use lots)

    Would you say that’s more like a baked pancake. It sure looks good, but I don’t have the cast iron skillet. My mom always cooked with one and I should get one. I think you might have left the amount of flour off…or did I miss it? It sounds so good. I’m tempted to try it, but I need to get the darn skillet first.

    This is a recipe that works fantastically well with gluten free flours. Now I need to try it with almond or rice milk to make it dairy free (I’m using ghee these days, which technically isn’t dairy free, but seems to be okay).

    Oh yum! I haven’t thought about Dutch Babies in years! Thsi would be a fun thing to make for a company breakfast! I just need to find my cast iron skillet!

    That looks so good! Mmm…. I’ve seen them on tv before…I think at the Pancake House? I’m not too sure… But now I have the recipe to make it myself! Of course, we don’t have an oven….so I’ll just have to save them for when we visit the US again.
