This makes a great, fresh appetizer or a light lunch or dinner

Ingredients
Scale
- 2 cups fresh diced tomatillos
- 2 cups fresh diced tomatoes
- bunch of fresh cilantro – chopped
- 1/2 cup red onion, diced
- 1 or 2 jalapenos, diced
- few sprinkles of rice vinegar
- 3 tortillas
- vegetable oil
- 1 cup shredded cheese
Instructions
- mix together tomatillos, tomatoes, cilantro, onion and jalpeno
- sprinkle with rice vinegar
- brush oil on both sides of tortillas and grill until blackened slightly
- break tortillas up on a microwaveable plate
- sprinkle cheese on tortillas and heat in microwave until cheese melts
- spread salsa on top
