This makes a great, fresh appetizer or a light lunch or dinner

Ingredients

Scale
  • 2 cups fresh diced tomatillos
  • 2 cups fresh diced tomatoes
  • bunch of fresh cilantro – chopped
  • 1/2 cup red onion, diced
  • 1 or 2 jalapenos, diced
  • few sprinkles of rice vinegar
  • 3 tortillas
  • vegetable oil
  • 1 cup shredded cheese

Instructions

  1. mix together tomatillos, tomatoes, cilantro, onion and jalpeno
  2. sprinkle with rice vinegar
  3. brush oil on both sides of tortillas and grill until blackened slightly
  4. break tortillas up on a microwaveable plate
  5. sprinkle cheese on tortillas and heat in microwave until cheese melts
  6. spread salsa on top

    That’s marvelous! I love your close-up photos. I confess I’ve never made anything with tomatillos…this will be my chance…and with all that lovely melted cheese. Yum!

    and doubt my little town carries them. Maybe I ought to grow some.

      They are the easiest things to grow! Practically weeds….

      I love them roasted on pork and in salsa, green chili….

    Wow, I’m drooling over those pictures. Gotta love tomatillo season – I used to grow those in my greenhouse, and they were my salsa pride and joy.
