Fresh Tomato Tart

Crunchy and sweet, cheesy and fresh – I can’t think of any better way to celebrate the beginning of tomato season!

Fresh Tomato Tart

Ingredients

Scale
  • 7 sheets of filo dough, thawed
  • 2 T olive oil
  • 5 T butter, melted
  • 7 T Parmesan cheese
  • 1 C thinly sliced red onion
  • 1 C shredded mozzarella
  • 8 Roma tomatoes, sliced
  • 1 T dried thyme
  • salt & pepper to taste

Instructions

  1. Line a large cookie sheet with parchment paper and brush lightly with oil
  2. Lay a sheet of filo dough on the paper and brush with a little butter and sprinkle w 1 T Parmesan
  3. Repeat with the rest of the filo, butter and Parmesan
  4. Top with mozzarella, onions, sliced tomatoes and thyme
  5. Bake in a preheated 375 degree oven for 30 or 35 minutes
  6. Let cool before slicing

    Love the idea of using phyllo dough. I’ve already reconciled myself to the fact that the closest I will get to my mother’s homemade piecrust is by using phyllo dough. Using it in this tomato tart is priceless.

    We are on the same wavelength again. I made Jamie Oliver’s tomato tart with phyllo last week! I like the herbs on yours…thought Jamie’s was too mild. Will be posting it soon anyway!
