Huevos Rancheros is, hands down, my favorite breakfast. It’s a guilty pleasure I give myself when I’m alone on a quiet, lazy weekend morning.

Ingredients

Scale
  • 1 medium size fresh tomato
  • 1/2 small jalapeno minced
  • 1 sprig cilantro, chopped
  • 1 sprinkle of rice vinegar
  • 1 raw tortilla
  • drizzle of oil
  • 1/3 cup black beans, heated in microwave briefly
  • 2 eggs, fried over easy in butter
  • 1/3 cup pepper jack cheese, shredded finely
  • salt and pepper from the mill to taste

Instructions

  1. chop tomatoes and mix with jalapeno and cilantro in a small bowl, sprinkle with salt and vinegar, set aside

  3. heat a large skillet with a little oil, fry tortilla on both sides until it starts to crisp slightly

  5. fry two eggs in butter, over easy
  6. place tortilla on a plate
  7. add warmed beans
  8. eggs
  9. salsa fresca
  10. cheese
  11. sprinkle with salt and pepper

This is good anytime, but it’s sublime in late summer when the tomatoes are their best.  If you want to treat yourself to a ridiculously good breakfast, make this with garden tomatoes, raw tortillas from a hispanic market and farm eggs.  It’s simply wonderful…

    That would be supper for me! Every morning I have a corn tortilla with an egg. Along with half a grapefruit, it’s my daily breakfast. If I ate something with jalapeno in the morning, my tummy would not be happy!
