Ina’s Outrageous Brownies

Warning: These are completely addictive. I cut the recipe in half so I wouldn’t hurt myself. You may want to consider doing the same. The best brownies ever!

Ina’s Outrageous Brownies

Ingredients

Scale
  • 1 lb unsalted butter
  • 1 lb plus 12 oz semisweet chocolate chips
  • 6 oz unsweetened chocolate
  • 6 extra large eggs
  • 3 T instant coffee granules
  • 2 T pure vanilla extract
  • 2 1/4 C granulated sugar
  • 1 1/4 C flour
  • 1 T baking powder
  • 1 t salt
  • 3 cups chopped walnuts

Instructions

  1. Preheat oven to 350 degrees
  2. Butter and flour a 12 x 18 x 1 inch baking sheet
  3. Melt together the butter, 1 lb of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. (I have an extra low setting on my stove, so I used that instead and watched it like a hawk!)
  4. Allow to cool slightly
  5. In a large bowl, whisk the eggs together with the coffee granules, vanilla and sugar
  6. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature
  7. In a medium bowl, sift together 1 cup of the flour, the baking powder and the salt
  8. Add the cooled chocolate mixture to the flour mixture
  9. Toss the walnuts and 12 ounces of chocolate chips in a medium bowl with 1/4 C flour
  10. Add to batter
  11. Pour onto the baking sheet and spread to the edges
  12. Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape between the pan and the brownie dough
  13. Bake for 15 minutes more or until a toothpick inserted in the middle comes out clean

    I’m a brownie fiend; I can’t make them unless someone else is coming. Several someone elses. I can leave most sweets sit, but not scratch brownies. I’m not sure I needed to know about these. But after your house fiasco, I think you needed them. All of them. P.S. Peeked at your Chard post: I Love Oregon Wine. You should have these brownies with Cristom Syrah! ’08 is great, but it’ all gone. I think they have some ’09 left. Happy 4th weekend.

    I knew someone would make these brownies. I almost picked this recipe. Next dessert month I’m doing it. My friends at the office will go nuts! I adore Ina and her recipes.

    It’s the coffee, don’t you agree? Gives them such a depth of flavor. It’s recipes like this that make me forever grateful I’m NOT a chocoholic. Things are bad enough. 🙂

    Hi There! This recipe looks very good. I do want to confirm with you on one thing – this is the no fat version, right?

    Just kidding! I agree with most of the other comments. I can’t make this recipe yet – I need to wait for a picnic or a pot luck gathering or I’ll be in trouble!

    firstly I am sorry I did not visit last week I was in the hospital having neck surgery .
