CLASSIC COBB SALAD

You gotta love a salad that has bacon in it…seriously..

Ingredient list:

3 hard boiled eggs, peeled & sliced
1 head romaine
handful of parsley
2 green onions
2 cups cooked chicken
2 avocados
2 tomatoes
1/4 lb blue cheese
1/2 c red wine vinegar
1 t Worcestershire sauce
1/2 t Dijon mustard
1 clove garlic
1/3 cup extra virgin olive oil
Kosher salt and pepper from the mill
1 T or so of reserved blue cheese

Start by frying the bacon (that phrase makes me all happy inside). When it’s crispy, drain it on paper towels until it cools down.

while the bacon cools, chop the lettuce coarsely

add the parsley and boiled, sliced eggs

sliced green onions

cooked chicken, cubed (any leftover poultry would work – chopped turkey is good in this)

avocado, peeled and cubed & the bacon! (also chopped)

tomato, chopped

blue cheese – if you can find the kind that comes in the yellow waxed package, it works really well in this recipe

mince the garlic, add the vinegar, mustard, salt and pepper to taste and Worcestershire sauce. Take a little bit of the blue cheese and mash in with the vinegar mixture. Slowly add the olive oil while whisking continuously to make a yummy dressing..

yowsa! this is good….

I chilled a bottle of Sauvignon Blanc (Meridian has a nice light one) to serve with it.

Crusty French bread makes it a meal…

    Hey, set a place for me! This is one of my favorite salads…anything with bacon and bleu cheese is scrumptious.

    I saw the picture of the recipe before this, too, and I definitely need to check it out, too.

    Today I made a greek rice salad and glorified rice (a rice-y kind of day) and took them to a neighborhood luncheon. Mine were the only dishes scraped clean…mwahahahahahahaha!

    I love when that happens.

    And I love when I open an Alphabe-Thursday link and see it’s you.

    I know I’m in for a treat.

    Mmmm, Salad….. It’s so rare these days for us to eat salads that I can honestly say that I miss having them. This Cobb Salad looks delicious! I’m not one for blue cheese though… Never been a big fan of the taste. Neither is Jason. Is there a good substitute for that?

    Cobb has always been my favorite salad. I rarely make it at home (so much trouble for one person) but restaurants don’t do a good job with it at all.
    This one looks marvelous! You’ll have to invite me over! 🙂
