This is my favorite version of cornbread, moist, simple and delicious. It’s great with fried chicken, or stew. I love this with a bowl of hot chili on a cold winter’s day! It’s also great with beans and rice or beans and greens.
Cornbread!
Ingredients
Scale
- 10 T unsalted butter
- 2 C cornmeal
- 2 C all purpose flour
- 1/4 C granulated sugar
- 1 T baking powder
- 1/2 t baking soda
- 1 T Kosher salt
- 2 large eggs
- 2 1/2 C buttermilk
- 3 T honey
Instructions
- Preheat the oven to 400 degrees
- Heat a 10 inch cast iron skillet over medium heat for 1 minute, add 8 T butter and cook 4 to 5 minutes, swirling the pan so the butter gets brown and nutty smelling
- Turn off heat under pan
- Combine cornmeal, flour, sugar, baking powder, baking soda and salt in a large bowl
- Whisk together the eggs, buttermilk and honey in another bowl
- Make a well in the middle of the cornmeal mixture and pour the wet ingredients in
- Whisk until just combined, then fold in the browned butter
- Return the cast iron pan to the stove top and add the remaining 2 T of butter
- When the butter foams, pour in the cornmeal batter
- Transfer pan immediately to the preheated oven and bake for 25 to 30 minutes, until set and starting to brown
- Serve with more butter and a drizzle of honey
Serve with a little more honey and butter. Yikes this is good!

Cornbread just isn’t cornbread without buttermilk and cast iron. I have a favorite skillet I use only for cornbread.

Cornbread – what can I say that hasn’t already been said before? Delicious, nutritious and did I say delicious?
I just heard a bit of info about cornbread in ‘the old days’ (1600’s) because there was no such thing as baking powder and baking soda, cornbread was made with yeast. As I know nothing about making bread, how would this affect the resulting bread? Would it be crumbly like it is now, or doughy like regular bread?

Not sure what yeast would do to it. It might have a crunchier top and a heavier feel like whole wheat bread.
I may have to play with that idea!

Oh I’m a great lover of cornbread, and your recipe sounds delicious, especially with that touch of honey! There are certain foods that require cornbread in our house — like black eyed peas or stew or chili. And plenty of butter and syrup poured on a slice for dessert!
