This is my favorite version of cornbread, moist, simple and delicious. It’s great with fried chicken, or stew. I love this with a bowl of hot chili on a cold winter’s day! It’s also great with beans and rice or beans and greens.
Cornbread!
Ingredients
Scale
- 10 T unsalted butter
- 2 C cornmeal
- 2 C all purpose flour
- 1/4 C granulated sugar
- 1 T baking powder
- 1/2 t baking soda
- 1 T Kosher salt
- 2 large eggs
- 2 1/2 C buttermilk
- 3 T honey
Instructions
- Preheat the oven to 400 degrees
- Heat a 10 inch cast iron skillet over medium heat for 1 minute, add 8 T butter and cook 4 to 5 minutes, swirling the pan so the butter gets brown and nutty smelling
- Turn off heat under pan
- Combine cornmeal, flour, sugar, baking powder, baking soda and salt in a large bowl
- Whisk together the eggs, buttermilk and honey in another bowl
- Make a well in the middle of the cornmeal mixture and pour the wet ingredients in
- Whisk until just combined, then fold in the browned butter
- Return the cast iron pan to the stove top and add the remaining 2 T of butter
- When the butter foams, pour in the cornmeal batter
- Transfer pan immediately to the preheated oven and bake for 25 to 30 minutes, until set and starting to brown
- Serve with more butter and a drizzle of honey
Serve with a little more honey and butter. Yikes this is good!

That looks so good! I love cornbread, but it has to be homemade. Store-bought tends to be dry. Thanks for sharing as your “C” post.
Delicious
Cornbread just isn’t cornbread without buttermilk and cast iron. I have a favorite skillet I use only for cornbread.
yumyumyum
Very interesting … I’ve never tried the corn bread, must be good.

Cornbread – what can I say that hasn’t already been said before? Delicious, nutritious and did I say delicious?
I just heard a bit of info about cornbread in ‘the old days’ (1600’s) because there was no such thing as baking powder and baking soda, cornbread was made with yeast. As I know nothing about making bread, how would this affect the resulting bread? Would it be crumbly like it is now, or doughy like regular bread?
VBR:
Not sure what yeast would do to it. It might have a crunchier top and a heavier feel like whole wheat bread.
I may have to play with that idea!
xxoo,

Yum. Now all it needs is some ham and bean soup on top of it. 🙂
That does look good. It sounds good on this cold windy evening we are having.
Yum! Tomorrow just might be chili and cornbread for supper!

I love corn bread with butter and molasses – it’s a Maritime thing!
Hi again RMW! Love corn bread oozing with butter especially now it’s soooo cold here in S Spain!
Thanks for stopping by. Have a great weekend and look forward to *seeing* you again!

Oh I’m a great lover of cornbread, and your recipe sounds delicious, especially with that touch of honey! There are certain foods that require cornbread in our house — like black eyed peas or stew or chili. And plenty of butter and syrup poured on a slice for dessert!
Sarah, I love cornbread with stew also!
I’m liking your “C” word cornbread. I hope you are saving me a piece. Did you know that I didn’t eat cornbread until I came South. Even though we raised corn on our Nebraska farm.

I will totally save you a piece!

Ma’am, you are quite the cook. I always love to read recipes but find that I am too lazy to plan ahead, especially when there’s a good book to read 🙂
Great timing! Tomorrow I’m making chili with cornbread – time to try a new recipe 🙂
I really hate to admit this to you, but I don’t have a cast iron pan. I’ve been looking at them though. The bread looks crumbly and delicious. Hope your Dad is home.
Doesn’t get any better with a bowl of chili – your own recipe sounds delicious!
YUM! I love cornbread and now you are making me VERY hungry for it!
YUMMY….
I love a good Cornbread recipe and this one sounds delicious…
There is nothing like a warm Cup of Chili with a tasty side of Cornbread on a Chilly winter day…
Thanks for linking.

RMW, I think you’re reading my mind! I need to make cornbread soon! 😛
I love that it starts with an entire stick of butter!
DAMN! And made in a cast iron skillet cowboy style.
