Orange/Fennel Salad

If you like fennel, you’ll like this salad. I make it in the fall when good tomatoes are hard to find and seasonal fennel starts showing up in the markets. Fennel has a mild licorice flavor and I love the crunch and freshness it adds to salads. Oranges are a fairly common combination for fennel, their sweetness enhances the natural sweetness of the fennel and in this salad the vinaigrette enhances the orange flavor.

Orange/Fennel Salad

Ingredients

Scale
  • 1 large fresh fennel – bulb only
  • 2 oranges
  • 1 head Romaine lettuce
  • 1/3 C parsley
  • dressing:
  • 1/4 C fresh orange juice
  • 4 T olive oil
  • 2 shallots, chopped
  • 1 T champagne vinegar
  • 1 t Dijon Mustard

Instructions

  1. Slice the bulb of the fennel thinly
  2. Add to chopped lettuce in a large bowl
  3. Chop parsley coarsely and add to bowl
  4. Peel and section oranges and add to bowl
  5. Whisk the ingredients for the vinaigrette in a small bowl
  6. Pour enough on the salad to make it glisten
  7. Season with salt and pepper to taste

    You know, it’s a funny thing. I love fennel…roasted, in soups etc. but have never cared for it raw. Also have never tried it with oranges and that nifty dressing. Perhaps that will make all the difference.

    Looks good, but I can’t seem to find the amounts for the dressing. All I find is 1/2 and then nothing. For years I have used the fennel greens when making Porketta. Pork roast stuffed with garlic, black pepper and fennel greens and grilled.

    🙂 Hi Ms. R.M. It’s been a while since I’ve visited you here. I have sneaked over to see how the house is doing (I am here for “O” day). It is lovely, I really do like your pretty landscaping.
    Save a bit of salad, if I can come I will. It looks too hard for me but I will come back to see how I could change it for less ingredients and to find some shortcuts that I could take. The Oranges will stay. 🙂
