Quick French Potato Salad

This is easy & quick to make on a week night. Serve it warm with something simple like grilled Italian sausage, fried pork chops or a grilled rib eye.  Bring out the best olive oil you have for this recipe because it really makes a difference in the taste…

Ingredients

Scale
  • 2 lbs more or less of red potatoes, scrubbed and cut into small pieces
  • 1/2 cup chopped green onion
  • 1/2 cup chopped red onion
  • 1/3 cup Champagne vinegar
  • 1/2 cup good quality extra virgin olive oil
  • 1 T Dijon mustard
  • salt and pepper to taste
  • 1 sprig of basil, chopped

Instructions

  1. Boil the potatoes in salted water until easily pierced with a fork
  2. Drain and then place in a large bowl and sprinkle with the vinegar, let it sit for a minute or two so the potatoes can absorb the vinegar
  3. Add the red and green onion and stir to combine
  4. Then add about 1/2 of the olive oil and mix thoroughly
  5. Add mustard and stir through
  6. Then add enough of the rest of the olive oil to make it moist
  7. Sprinkle with salt and pepper and chopped basil

    love potato salad with red potatoes! Have a similar recipe, but instead on basil I add tarragon – so yummy!

    Mrs. should like this, she is a lot French. I know it’s better than what I had for my lunch snack at our Kroger sample dish. It was ‘Family Style Potato Salad,’ yellowish in color with eggs.
    Since she is from Graves, near Bordeaux, she might want to use red wine vinegar as that is what she uses. How about “Bordeaux Red Wine Vinegar?” She likes Champagne so that will probably be it.
