Jalapenos Wrapped in Bacon

I’ve seen recipes for these all over the web but have successfully avoided making them until now. A friend brought these to a Super Bowl party I attended last year and I think I ate about a dozen. It wasn’t pretty my friends…

I had some jalapenos laying around last weekend, and some cream cheese and I ALWAYS have bacon in the house, so I finally gave in and made some and then promptly ate them all. This isn’t really a recipe, they are ridiculously easy to make and even easier to eat.

Here’s how to do it:

First, wash your cute little jalapenos, get distracted by how pretty they are and take about six pictures of them…

slice in half and scoop out the insides

fill with cream cheese and wrap with bacon pieces – I used pepper bacon cut in thirds – and put on a half sheet tray with a rack

bake in a preheated 375 degree oven for 20 to 25 minutes – or a little longer if you like your bacon crispy like me

    These look really good – but wouldn’t they be really hot? I like my Indian food spicy and Indonesian food really sharp, but I don’t know jalapenos well enough to know how hot this would be.

    They are spicy, but not too hot. If you get all the seeds out, it helps and the cream cheese sort of cools the palate a bit…

    I am doing the happy dance all over my home office. Could not have found a better day to find you. Love jalapenos, love cream cheese, love bacon. On a low carb diet so these would leave me without sin.
