  • 1 T extra virgin olive oil
  • 1/4 cup chopped hellow onion
  • 1 t minced garlic
  • 2 t thyme
  • 1 large package frozen lima beans
  • 2 T chopped red onion
  • 2 T fresh lemon juice
  • 5 T olive oil
  • 1 t basil
  • 2 T minced parsley
  • Kosher Salt and pepper from the mill to taste

Instructions

  1. Heat a saucepan over high heat for one minute
  2. Pour in the olive oil and add the yellow onions and garlic
  3. Turn the heat down to medium and saute for a few minutes until the onion softens

  8. Put the onion in a small bowl, add the lemon juice and a pinch of salt
  9. Let it sit five minutes and then add the rest of the olive oil
  10. Whisk it all together
  11. Drain the beans and put them in a serving bowl
  12. Add the dressing, thyme, basil and parsley
  13. Toss lightly

If you can find fresh lima beans, definitely use them – substitute about 2 cups of fresh ones

This looks delicious. Limas are one of my favorite veggies. The salad sounds fast, easy, and satisfying.

Oh, I am a HUGE lima bean fan, but I almost always just eat them plain with a bit of butter and salt. I can’t wait to make this.

What a delicious salad! It is not difficult to make but includes enough cooking to feel like it is an achievement of sorts. I replaced basil with dill as a personal preference.
