Rhubarb Sauce

It doesn’t feel like spring to me until I start seeing rhubarb in the markets. And finally, finally, the snow is beginning to melt and everything is greening up around here.  It’s about time!  I made this rhubarb sauce in honor of spring.  Try it!

Start with about a pound of fresh rhubarb, diced…

add a small chunk (about an inch) of fresh ginger, smashed

place in a medium saucepan and add 3T of water, a few passes on your grater from a nutmeg,  and about 3/4 cup of sugar (more or less, depending on how tart you want it)

Cover and simmer until it turns into this (about 15 minutes)

I put mine on top of ice cream, but you could be healthy and serve it on hot cereal or yogurt.  (The ice cream is better)….

    how exciting to find another rhubarb lover! my husband has been asking for rhubarb sauce for days now..and i keep making other things. i am definitely going to try your recipe and surprise him with a big bowl of ice cream and rhubarb sauce!

    Yumm! We trans-planted 5 rhubarb plants from hubs grandparents home last year. They had both passed away within a year of each other and the family was selling their home. Grandpa was a hugh gardener. The plants all came up this year but are not very high. Do you know if we have to wait a couple of years before cutting for use? I might have to raid a friends garden this year again!

      I don’t think you’re supposed to pick them the first year and then just a “light” picking the second, but on the third year you can pick all you want.

    Sounds delicious. I think it makes the ice cream healthy if you put this on top. Did you know then calories don’t count LOL.

    Oh yum. I love rhubarb, too! I miss rhubarb. Once in a while we see it in the store here in AZ but it is all limp and kind of not exciting.

    I used to have a great recipe for rhubarb cake…but I never bother to dig it out anymore. Oh, it was luscious!

    I have fond memories of rhubarb, picked straight off the plant and eaten with a dab of sugar. Sometimes I even loved to just eat a stalk for fun. I miss it-doesn’t grow here in the desert! Enjoy it for me.
