Spring Vegetable Roast

Spring usually means lightening up a bit for me food wise. I typically roast in the winter and grill in the spring/summer, but this recipe is an exception for those early spring nights that still feel quite a bit like winter. So simple, but so good. I had this for dinner with a glass of Sauvignon Blanc and a piece of leftover roast chicken and it really hit the spot.

Ingredients

Scale
  • 1 bunch asparagus, cleaned and trimmed
  • 1 lb green beans, cleaned and trimmed
  • 6 small new potatoes, cleaned and quartered
  • 2 T olive oil
  • salt and pepper to taste
  • sprinkle of red pepper flakes

Instructions

  1. mix the vegetables with the olive oil on a sheet pan
  2. sprinkle with salt, pepper and red pepper flakes
  3. roast until potatoes are soft, about 30 minutes

    I package a diced baking potato in foil with onions and cook on the outdoor grill. Next time I will throw in a handful of asparagus and maybe some French Green Beans. Could be interesting.

    Loveee asparagus and loveee beans. So this is a perfect dish for me! Too bad it’s Autumn where I am, but not going to stop me eating these!

    Yummmmm. I like roasting asparagus in the toaster oven in a bit of olive oil and balsamic vinegar. Haven’t done beans yet. Must try that.

    That looks delicious! Roasting vegetables is the greatest idea/invention ever…all veggies are fabulous caramelized. Never have used green beans though…must try.
