These sweet cream waffles turned out pretty good! I tweaked my sweet cream pancakes a little to make them work better with the waffle iron. I still think that the pancakes are better, but these were nice for a change.
Sweet Cream Waffles
Fluffy, sweet rich waffles
Ingredients
1 1/2 C flour
1/2 t salt
1 t sugar
1 T baking powder
1 t vanilla
3 eggs, separated
1 C heavy cream
4 T melted butter
Instructions
Combine the flour, sugar, baking powder and salt in a small bowl
In another bowl, mix together the egg yolks, cream, vanilla and melted butter
Add the dry ingredients to the wet ingredients and mix thoroughly
Whisk the egg whites until stiff peaks form
Fold egg whites carefully into the batter
Cook in a waffle iron until done, 3 to 5 minutes
Serve with butter and maple syrup or powdered sugar and fruit.

Delicous – perhaps the best waffles I’ve ever had. Crisp and chewy. I like to substitute 30% whole wheat flour in most all white flour recipes, and the results were still fantastic here. Also added 1 tbsp (T) real vanilla extract and abt. .5 tsp (t) ground cinnamon. I have a Cuisinart waffle iron and I find most waffles do best set to the almost highest level – 5.5/6. Waffles are kept warm and toasty in the oven at 175 deg F while the second batch cooks. This made almost eight waffles.
